A simple dish to bring to a 4th of July BBQ?
I was told not to bother but feel stupid because everyone else is bringing something. Just some kind of a snack dish.

Roasted Potato Saladis an excellent compliment to and 4th of July BBQ
and will keep your guests returning for more. This one is for a large crowd but the amounts can also be reduced or increased based on the size of your party. Best of all, its extremely simple to make!
Ingredients:
2-1/2 pounds of Red or Yukon Gold potatoes
10 slices of low sodium bacon fried and chopped
3 extra Large Eggs (Hard Boiled)
1- 15 oz. container of Hellmann's Mayonnaise
Extra Virgin Olive oil
Preheat oven to 400 degrees fahrenheit.
Take one large baking pan and line it with Reynolds non-stick foil. Pour a generous amount of Olive oil onto the foil and spread it evenly over the baking surface with a basting brush.
Take 1/2 pound of potatoes and chop them into bite sized pieces. I like to use red/ new potatoes or Yukon Gold because of their great flavor. After chopping the potatoes place the onto the baking sheet covering entire sheet with potatoes. Place baking sheet in preheated oven and roast potatoes until golden, turning several times.
Brown bacon in a frying skillet until crisp and chop into small bits.
Hard Boil eggs and cool.
After potatoes are brown, remove from oven and allow to cool. Place them into a large bowl lined with paper towel to drain oil.
Use another large bowl to mix mayonnaise, chopped egg, chopped bacon and cooled potatoes. Add salt and pepper to taste and mix. Chill for approximately 1.5 hours and serve!

Pasta and Shrimp Salad
This easy Pasta and Shrimp Salad is a refreshing twist on a popular pasta salad.
Ingredients:
1 box of Gemeli Pasta, boiled and drained (Rotini pasta can also be used)
1 small container of sundried tomatoes (chopped)
1 green pepper (chopped)
1 small container of black olives
1 pound of steamed shrimp (chopped)
10 fresh basil Leaves chopped
Extra virgin olive oil
Apple Cider vinegar
Salt and pepper
Boil Pasta and drain.
Combine all other ingredients and add a small mount of olive oil and 2 tablespoons of apple cider vinegar and salt and pepper to taste. Mix ingredients in a large bowl and refrigerate for 1 hour. Serve.
(Steak, hamburgers, hotdogs, and corn on the cob are also welcome.)
